Best time to buy marked-down food

I always keep an eye out for discounted meats and other food at my local Grocers. I seem to find it somewhat consistently on Monday's and I'm crossing my fingers that there will be some Lamb today since Easter/Passover is passed. I find "fresh cut" herbs all the time marked for .50 and snap them up unless I just don't need what is discounted (I dehydrate most of it and add it to my spice stockpile if it isn't used immediately). I kept an eye out for corned beef after St. Patricks with no luck. Have you found a reliable pattern at your local store? What percentage can you save? Or are you like my wife and see it as a dubious purchase at times, since it's close to going bad.
