Entertaining Without a Stove

I've recently been put in charge of a TGIF event for an academic department. Last semester this was always the same cold cuts, bags of chips, and ice cream every week. I'd like to do something different, but the only cooking resources in the building are a microwave, a toaster oven, and coffee makers capable of producing a lot of boiling water, which leaves me stumped as to what other options I have.

I've come up with a few other ideas, but was wondering what you guys could come up with as far as recommendations for different kinds of things I can serve so it's not the same every week.

It's worth noting that maybe twenty to thirty people come to this and some of them have a meal while some just eat very lightly and that I have about $150 to spend each week.
