Make Vegetables Interesting

Since reading about crispy kale here, I've made it a few times and think I've perfected my technique. It's a tasty way to eat a super-nutritious food, and a batch can be stored for quite some time.

Does anyone have other ideas for turning vegetables into snack foods?
