Can I make my cheese sauce in advance?
I'm preparing a baked macaroni and cheese. My usual recipe is to boil the pasta to al dente, then rinse; prepare the cheese sauce; layer the pasta and cheese sauce; top with bread crumbs and butter; and bake. Can I take a break and refrigerate the dish after I've layered, and bake it the next day, or will the cheese sauce break?
