Advice on catering for 25 people - needs to be transportable!
I live in Brisbane Australia, and my beautiful city was hit hard by devastating floods late last week, and the receding waters have left quite a mess.
The community spirit has been incredible, with complete strangers helping clean out filthy, muddy, damaged homes & businesses. The food community has been baking and cooking like mad, taking food & water out to volunteers working tirelessly.
I have volunteered to make dinner for 25 volunteers at the Relief Headquarters on Thursday. They have a kitchenette and a microwave, so each can make their own plate & heat as required. I'm thinking they're probably heartily sick of lasagna at this point, and will need to provide a selection of dishes to cater for dietary restrictions as well.
I thought maybe a couple of paellas ( gluten-free, and one can be vegan), a big green salad, and a couple of spanish-y sides like spinach & chickpeas. I'll also make a couple of cakes.
