Starting a Dry Mix Gourmet Business.

I am inquiring about stating up a gourmet dry mix business. Does anyone have experience with this and advice? Do you know if you need a commercial kitchen in order to prepare and package the mixes. I see the craft fairs are full of these booths and I am sure that they people do not have commercial kitchens. Any help/ideas would be greatly appreciated. Thanks
