Gravy Failure

So, I'm horrible at making gravy. I've failed, and failed, and failed. I never seem to have enough drippings, or the flour and/or cornstarch never seems to smooth out, or the flavor is off... Thanksgiving is fast approaching and my homesickness requires gravy on my mashed potatoes. Italian food is good, especially when you live in Italy like I do, but sometimes its not enough.
