French Apple Tart

I desperately need your help!

In the vain of the classic French Apple Tart from Madame Dumas, are there any places that exist today that mimic such tarts. I'm not talking pie and I'm not talking tarte tatin...I'm looking for the old school, thin crust tart...

Ed Levine suggested Ceci Cela and the new Payard but I heard mixed reviews about Ceci Cela and Payard has a pear and apple tart--I'm looking for apple only. Any real, classic, french pastry/bakeries I should try?
