Cornish pasty for turkey leftovers?

I've never made pasties before, so do you think leftover turkey is a workable choice? How about if I add some bacon & apple? I'm researching recipes on SE & elsewhere, but am always grateful for the input here.

I do have tried & true stock/soup/casserole recipes for leftovers but am trying to be a little more creative & broaden Mr. Veryvino's horizons:) Thanks.
