What are the best professional pizza courses?
I want to learn how to make pizza at a professional level, and I am looking for a good course to kick things off. I am familiar with Tony Gemignani's school, but the timing doesn't work for me. Is there an equally good alternative on the west coast or the northeast? I'd like to learn how to work with a gas oven, so I am not sure that a Neopolitan course would be helpful or not. Thanks.
