This Rick Bayless recipe was a SE readers' favorite according to the end of the year SE awards in 2009. I've been meaning to make it since then, and finally made it last night. I had issues with the recipe, too little chicken (3 cups for 12 enchiladas??), too little cheese (1 cup doesn't touch a 9X13 pan), too much sauce (DID I SAY THAT??) and 12 'chiladas won't fit single file in a 9X13. But over all they were pretty tasty and I'd make them again.
