WHAT'S UP WITH IRON CHEF AMERICA?

I JUST STARTED WATHING "IRON CHEF AMERICA" ON THE FOOD NETWORK. I'M REALLY ENJOYING IT, BUT I'M A BIT CONFUSED; THEY SAY THAT THE MAIN INGREDIENT IS "SECRET", BUT I DON'T UNDERSTAND HOW THEY CAN KNOW EVERYTHING THAT THEY ARE GOING TO MAKE, AND THEIR SOUS CHEFS KNOW EVERYTHING THAT THEY ARE SUPPOSED TO DO RIGHT AWAY. EXACTLY HOW MUCH TIME IN ADVANCE DO THEY REALLY GET TO DECIDE ON THEIR RECIPES THAT THEY ARE GOING TO MAKE, PREPARE, ORDER INGREDIENTS ETC. ALSO, DO THEY USE SOUS CHEFS THEY NORMALLY WORK WITH, OR ARE THEY PICKED OUT SPECIAL FOR THE SHOW, AS I WAS HAPPY TO SEE ED FROM " TOP CHEF" (WHO, PERSONALLY I THOUGHT SHOULD HAVE WON, AND ALEX SHOULD HAVE BEEN DISQUALIFIED FOR STEALING HIS PEA SOUP)?
