Sandwich Bread

OK.. i recently started making my own homemade bread. No breadmaker, no expensive kitchen aid. I knead the dough completely by hand. So far the bread tastes wonderful. The big issue i seem to be running into is that id love to be able to make sandwich size bread.

Let me explain further. I started making bread and loved it went to Bed bath and Beyond and purchase a wonderful silicon 9.25x5 inch bread pan. So.. i make the dough i knead it and leave it to rise. BUT i can never get it to rise enough to create the muffin or raise up high enough into a dome to make sandwiches out of the bread. Everytime it comes out of the oven it stands roughly an inch and half high..

Any help on this would be greatly appricated.

Additonal notes.

I live with roommates who keep the house very cool which may be my entire problem. ive thought about this and wondered about putting the bread in the over with it off to keep it warm and not retard the yeast and the bread rising.

I just at a loss for this one and any help on making bread that can rise to the needs of a sandwich(please dont tell me to buy a bread maker) would be ohh so much help..
