Roast Chicken

Quite a few years ago, I saw a cooking show on TV in France. The cook prepared a roast chicken with stuffing. He did a really unusual method of putting the stuffing under the skin on the breast which would protect the breast meat and help the dark and light meat get done at the same time.. I have wanted to try this out for a long time. So......I've been trying to find a recipe for this, but have had no luck. My main concern is the roasting time to be sure that the chicken is evenly cooked. Has anyone tried this sort of thing? Can you offer a recipe?
