I'm making pavlova for my friend's baby shower, but can't find my recipe. I tried the one from Saveur last night and this morning discovered my pavlova had shattered on the outside and the inside was a gooey solid mess (more that it should be -- it was a dense marshmallow). I have a few more days to try, but I need to make at least two -- which means finding a recipe by tomorrow. Does anyone have a reliable recipe? From the number of "foolproof pavlova" recipes online, I'm guessing that there's a lot of bad recipes -- and that the foolproof ones aren't exactly foolproof.
