More ideas for Chinese bacon?
This past weekend, I finished up my last, I think, pork belly project for the year. I made the Homemade Chinese Bacon from Fuschia Dunlop's "Land of Plenty". Came out terrific and the smoking part wasn't even difficult.
Anyway...I quickly made a stir-fry with bacon and some chili bean sauce. Tonight, I'm adding green beans to this stir-fry. I can foresee adding the bacon to a chow mein and fried rice. But in my head I have this idea about a non-Asian style pasta dish, but I'm sort of stumped because I'm not sure what to pair (add really) with this lightly smoked bacon that was cured with brown sugar, cinnamon, star anise, and Szechuan peppercorns. Do want to lose the lovely flavors, but also don't want to add something that would be drown out by the bacon either.
Any thoughts/ideas, SErs? Any other ideas are welcomed too!
