Grilled Stuffed Mushrooms
This recipe for grilled, stuffed, jumbo white mushrooms cooks beautifully on the grill. It's simple to prepare and impressive, served as an appetizer or side dish.

Ingredients
16 large white mushrooms (washed, stems removed)
1 small package of stuffing mix (follow simple directions, adding butter and water, do not add chopped vegetables)
1 package frozen-style spinach (thawed, well drained)
1/4-cup grated mozzarella cheese
1/4-cup grated mild cheddar cheese (yellow)
Italian salad dressing
Salt and Pepper
Procedures
PREPARATION INSTRUCTIONS:
1. Prepare stuffing mix: Follow "simple directions" (butter/water only; do not add chopped vegetables)
2. Prepare spinach; add salt and pepper to taste
3. Spoon stuffing into washed, stemmed mushrooms (to fill 1/2 of stem void)
4. Spoon spinach into remaining half, stuffing slightly over the tops of eachmushroom
5. Add a drizzle of Italian salad dressing to spinach layer
6. Sprinkle approximately 1/2-tsp. of grated mozzarella cheese on each prepared mushroom
7. Sprinkle approximately 1/2-teaspoon of grated yellow cheddar on each prepared mushroom
GRILLING INSTRUCTIONS:
Place stuffed mushrooms on pre-heated grill for approximately eight to ten minutes (low to medium-low heat). Keep lid closed.
