I made shortbread cookies over the weekend and used the chill, roll, cut (with a metal cookie cutter) method and I realized that some of the cookies held their shape and some blobbed out.
I used a cold cookie sheet and between cutting new shapes I put the pan in the fridge to keep the dough from melting.
I noticed that the 1st row of cookies cut puffed up and lost their shape but the last row I cut came out perfect. the thickness of the cookies stayed the same between each new roll.
any ideas on what might have happened?
