Mole tastes like...?

I just had mole today at a new Cuban/Latin American restaurant and it tasted like tart dirt with some slightly sour/bitter notes to it. Is that right? It was a good thick consistency poured on some pulled chicken, but one bite put me off. I don't have mole very often, so this bite has confused me on what good mole should taste like. Can't tell if it's my palate being a punk or the mole itself misbehaving...
