What would you do with Manchego?

So, I have a block (because I couldn't resist buying it!) and I was looking for different ways to utilize it. I thought of Fondue or just plain old eating it (YUM) but was looking for something else. Has anyone ever used it for Mac and Cheese? I'm up for anything! I can't wait to hear your delicious ideas. :-)
