This week John T. Edge wrote a wonderful article all about the unlikely marriage of Korean barbecue and Mexican food that has become nothing short of a coast to coast Korean taco explosion. The article got me thinking: Korean and Mexican work so well together, why not try other Mexican mash-ups?
For this week's challenge we want all of you to fill a tortilla in an nontraditional ingredients, and I'm not talking about a chicken caesar wrap. The possibilities are virtually endless— spicy Italian sausage and broccoli rabe, char siu, barbecued brisket tacos with cole slaw? Korean meets Mexican might have sounded pretty outlandish, what are the craziest corn tortilla combos that you can come up with?
