I'm planning an evening beach bonfire birthday party and would like to serve a showstopping cake, but can't decide what to make. Any ideas? It should be easy to transport, low-mess to serve (although a little mess is OK!), and able to hold up for a few hours on a warm evening (in an ice chest if necessary). Cupcakes are the obvious choice, but I'd like something with a little more wow factor. What size/shape cake would you choose, what type of frosting, and what flavors? In my perfect fantasy world I would make some kind of ice cream cake--I just can't figure out how to keep it from melting at the party! Suggestions would be appreciated!
