I picked up a small package of pasta sheets. I admit, I could not resist. Now I have to decide what to do with them. It's 90 degrees outside so I don't want to do anything that takes a long baking time. 35-45 minutes tops unless the weather changes.
I was thinking about making rolls with ricotta, Italian cheeses, fresh basil, spinach and roasted red peppers in a light tomato or cream sauce. Or ricotta-mushroom...spinach-artichoke...You see. I'm in a bit of a rut.
I've got a couple of days to decide and would love Serious Eater suggestions. You always inspire me and give me great ideas.
The pasta sheets are very fresh so they are easy to adapt to other uses too.
