We host the annual Memorial Day feast in our extended family. Just sitting here making out my hamburger/hot dog list is making me blue. Is anyone planning a jazzy menu for Memorial Day that I can poach? I need grill meat that cooks quickly. Ribs are too messy. Lamb is not universally accepted. I made some salmon burgers last year to go with the beef, and I was the only one that ate it. Cajun spiced hammered chicken breasts, perhaps.
