I have too much lovage. Any ideas what to do with it?
Lovage is a perennial, and I've discovered that I must have the perfect garden spot for it. It's five years since I planted it and every year it grows into a 6 ft. tall bush. Every year I hack it back to a manageable size and freeze a portion of chopped herb and stem to use in soups and stews all winter.
It has a very strong celery-like flavor and it can be overpowering; but I hate to compost so much of what I cut back. But it begins to encroach too much on the surrounding plants.
Any ideas? Thanks!
