Bringing along vegetables on an overseas trip

I'll be travelling to Central America next week and from the travel book I've read, greens are not their diety staple and I'm a gal who needs her vegetable servings everyday. As much as I'm exciting to have my portion of rice and beans, I am worried about my diet oversea. I'm crazy enough to think of bringing some vegetables along with me. Maybe vacuum pack them? Anyone has any ideas? Thanks!

PS I've no access to a kitchen, so I can't really go to the local market to buy groceries.
