Someone else's post about mashed potato fries got me thinking about something I've been meaning to ask Serious Eaters for a while.
I've heard that sweet potatoes are much better for you than regular potatoes and I've been eating a lot of sweet potatoes lately. Is the same true of yams? I went years eating yams thinking they were sweet potatoes because they look so much alike. How similar are they in terms of health benefits?
Question Part Two:
I've always wanted to try sweet potato fries, but everytime I try to make them they turn to mush and have burnt bottoms. I don't have a deep fryer and wouldn't want them deep fried anyhow, but is that the only way to get a successful sweet potato fry? I want to roast them and I've tried doing it with their skins, without their skins, at very high temps, etc- all to the same results.
