Not cooking with olive oil
I read recently that Thomas Keller doesn't cook with olive oil because it's expensive and the flavor is ruined by heat. Instead he uses it like a finishing salt and cooks with canola or grapeseed oil.

As far as who it's coming from it's hard to ignore, but does any one else have strong thoughts one way or another? I buy the inexepensive stuff because of my budget, but I easily go through a really big bottle in a month or two, depending.
