I make THE worst black beans.

I start from scratch... dry beans. I sometimes overnight soak, I sometimes do a 90 min dry to cooked oven method, I sometimes do a quick boil from dry, let soak for a few hours, then cook - but EVERY time I think they taste bad. Today I really took my time with them. I cooked them with plenty of salt, onion, garlic.... they weren't very good. I don't want to go back to canned, but what the hell am I doing? They never get soft enough, they are bitter, I'm unhappy. Yuck.
Please advise.
