I have an old recipe for pecan pie that I would like to try, from a New Orleans community cookbook I found in my Grandmother's stash. It calls for an ingredient called cane syrup, with the added notation NO SUBSTITUTIONS, capitalized and in bold. Cane syrup turns out to be a historical American ingredient, listed on the Slow Food website, and fairly difficult to find. It is what it sounds like, a syrup made from relatively unprocessed sugar cane.
I know I can order it off Amazon, (the brand is called Lyle's Sugar Syrup) but it would be a lot more interesting to me to go purchase it. Have you seen this ingredient around? North Brooklyn or Lower Manhattan would be the best locations, but I'm willing to make a special trip, especially if the purveyor has other interesting things worth buying!
