Before anyone starts pelting me with stones (or tomatoes in this case, since this is Serious Eats), I'm a real newbie when it comes to baking. I think the only thing I've baked in my life were the basics: Cookies and cupcakes.
I have big problems when it comes to cookies. In Hong Kong, it's usually hard to find a good cookie sheet for baking, so I either have to dust the pan with flour or butter. This worked for my mom when she cooks brownies, so I did it to my cookies.
Actually, they just stuck to the pan and never let go. I usually have to scrape them off the pan, and the cookie would tear apart (which makes my heart break everytime).
Any tips? Or do I really have to find cookie baking sheets?
