Campfire cooking!

So you're on vacation. You might be camping, or you might have the advantage of a huge backyard in a town with no fire codes. You decide you want to go all Early Man, stick some food over a campfire and see what happens. You ponder the possibilities. What to make?

Maybe you make s'mores, stick some hot dogs on a stick; or, if you're slightly more gung-ho, and you cook your entire breakfast-- bacon, hash browns, and all-- on a fire you started at five or six in the morning.

The question I pose to you, Serious Eaters: What do you like to cook when you have the advantage of a large pit in the ground filled with flames and red-hot coals?
