Best Cinco de Mayo recipes for a crowd

I'm doing a "cooking party" with a group of 10ish people on Cinco de Mayo.
I'd like to make something that a) can feed a crowd, b) will take no longer than 1 hr total (prep + cooking), and c) can have a vegetarian option, if necessary.

I've never done much Mexican cooking beyond tacos and fajitas, so any specific suggestions on cooking techniques, species, etc are welcome.
