Weekend Cook and Tell: Curries and More
Welcome to the Weekend Cook and Tell. Every Wednesday we scour the food sections of various national newspapers to create a weekend cooking project. We hope you'll cook along with us and share your experiences, recipes, and photos here.
This week's challenge is all about Indian cuisine inspired by an article that set out to debunk Indian food misconceptions from the San Francisco Chronicle. Janny Hu sits down with Neela Paniz, chef-owner of Neela's in Napa in California to explain why so many folks are averse to Indian food.
Greasy, heavy, and overly spiced—these are all complaints, but only by those who have never experienced the fresh, bright, and healthy joy that is well-prepared Indian food. Paniz has been championing modern Indian cuisine for the past 20 years by serving balanced and harmonious dishes that rely on the freshest ingredients and spicing meant to enhance flavors and not overpower or weigh down.
Our challenge this week is to try an Indian-inspired dish at home. In the past year Indian has become my go-to quick-and-healthy weeknight meal, thanks in great part to 660 Curries by Raghavan Iyer.
