Special Dinner Help

Hi Everyone-

I'm having my graduation dinner during the first week of May. I have to choose from the following...

Rosemary Roasted Cappretto (baby goat)
anson mills creamy polenta, charred ramps, spring vegetables

Whole Suckling Pig
sauerkraut, roasted summer fruit, macaroni & cheese

LBJ Slow-Roasted Beef Brisket
baked beans, coleslaw

Whole Roasted Baby Lamb
anson mills creamy polenta, ratatouille, saffron rouille

Spice-Roasted Poussin
yukon gold potato puree, garden vegetables

Wood Grilled Wild Alaskan Salmon
salt roasted fingerling potatoes, sauce béarnaise, asparagus

...Here are some other givens:
-Non-negotiable: I am going to be drinking something rose or sparkling. So sue me.
-We are a vegetable-heavy family (meaning we tend to eat vegetarian at home, but all eat meat when we're out.)
-First course is going to be a seasonal gazpacho.
-Between 8-9 people.

Someone told me that the goat would probably be dry, given the season...I don't think in those terms, so I'm posing this question...

What do you think is the best choice, given seasonality + all those requests?
