What can I do with Serrano ham trimmings?
I work at a restaurant that has a charcuterie station and the chef offered me the fat trimmings from the Serrano. Not one to turn down anything free, I took it, but now am at a bit of a loss as to what to do with it. Can I use it to flavor soups, beans, etc. like you would with salt pork or bacon?
