I've heard that pancake batter "lasts a week" in the refrigerator. I was wondering if this is true. If it is or can be true, does it matter what recipe you're using or are all batters created refrigerator-life equal?
I'm open to other leftover pancake batter suggestions. We enjoy eating pancakes at home but most recipes yield more than we can eat in one sitting. While I like having a pancake to snack on later in the day, I'm not a huge fan of day-old pancakes.
