How far would you go...? appease a picky child's food phobia? Please give me your honest opinion on this TRUE story.

One of my HIGH SCHOOL STUDENTS, told me that she wasn't going to eat the spinach artichoke dip her Foods and Baking class was making and she was going to claim she was allergic to artichokes and her mother wrote her a note so she wouldn't have to try them. (the class has a policy that part of the assignment is to taste the food you make) I asked her if she is actually allergic and she is not. When I asked why she wouldn't try it she answered, "Have you even seen one of those things [an artichoke]?"
