Bunuelllos - My family favorite Passover Treat
I promised last week or so to post the recipe for my family favorite Passover treats. From what I understand the literal translation of the name is "Fried things". They have been made in my family (Sephardic) for generations but I have never had them anyplace else. I would be very interested if anyone reads this and recognizes a possible source of the recipe! We know some version of it came over from Rhodes with my Grandmother's family, but that is it.
Passover Treats
Ingredients
2 large potatoes
1 lb (6 cups) matzoh farfel
8 beaten eggs
2 handfuls matzoh meal
1 tbsp salt
3/4 cup grated Romano cheese
Oil for deep frying
Procedure
1. Pare, peel and quarter potatoes, boil until fork tender.
2. Soak farfel in water 10 minutes and drain.
3. Add eggs, salt and matzoh meal to farfel.
4. Hand mash the potatoes and add to mixture.
5. Add cheese to mixture.
6. Deep fry large spoonfuls until golden brown on outside and cooked through with fluffy interior. Serve hot with honey for dipping.
