Smoked pork question

Hello everyone!

I am currently living in Austria for school, and let me tell you, it has been an amazing last few weeks as I have been trying all of the food here.
My wonderful new roommate has given me some homemade smoked pork that was given to her by her mom but which she does not like very much. The taste is incredible, but unfortunately the texture leaves something to be desired, at least by me. It is tough and chewy. Does anybody have any suggestions on how I can make the meat more tender? Would making some sort of stew work? I would be sincerely grateful as I don't want to let the pork go to waste.
