What to do with a cooked smoked trotter
So, I'm making a big pot of beans in the oven right now, and I threw in a big ol' smoked pig's trotter. ($4 for soooo much smoky pork flavor!)
What do I do with the trotter when the beans are cooked? Can I just eat the meat? It seems like it's all fat. What do you like to do with these things?
