Yeah, so I live in Denver and am lucky enough to have Marczyk's Fine Foods near my work. Anyway, I was looking for some shrimp for the shrimp and grits I have planned for tonight but decided to ask for some marrow bones while I was there.
Luckily, they had just received a whole Colorado cow and butchered it, leaving these amazing pearly white femur bones for me to buy. So I have a single pristine femur (about $10) from a grass-fed cow (split down the middle) and I think I might make Bourdain's "last meal" (http://www.seriouseats.com/recipes/2008/03/roast-bone-marrow-and-parsley-salad-anthony-bourdain-recipe.html) as an appetizer tonight.
Then if that wasn't good enough, I got 4 of the BIGGEST shrimp I've seen in my life. They're ~8 per pound! They are wild-caught in the Sea of Cortez and Marczyk's was the only place in the USA with them, as they bought up all 40 cases.
So yeah, the plan is:
Roasted Bone Marrow w/Homemade Grilled Bread and a Parsley Salad
Those ridiculous shrimp (2 per portion.. seriously, they're MASSIVE), cooked lightly in a pan after being tossed with smoked paprika, lemon juice, and salt/pepper... served over:
Cheese Grits (well, polenta..same difference) with Pecorino Tuscano
Braised Collard Greens w/Bacon and Sherry Vinegar
I think I'm gonna sleep well tonight... I'll use the bones for pho broth most likely, they're so beautiful there's no way I'm not sucking every ounce of flavor out of them.
