Spices and Oils - Choose One of Each

Assuming Salt and Pepper are a given, name the one and only spice that you would want in your cupboard. Do the same for an oil of your choice.

Rather than selecting something that I'm used to, I would choose something I can't afford on a normal basis that also has multifunctional properties. And if you're an oil, I'd select something subtle enough to be used in a salad, and tough enough to have a high smoke point for roasting/sauteeing.

Extra Virgin Olive Oil is great, but it will burn with less than 300 degrees F heat. Many people are replacing avocado oil with olive oil, but it's pricier. Neverthless, if price is not an option, what would you choose?...

Saffron, Green Cardamom, Vanilla Beans...
Avocado Oil, Sunflower Oil, Safflower Oil...

You can use saffron for Ice Cream and Boullabaise. You can use Green Cardamom for Chai Tea and Pumpkin Pie. Vanilla for a nice fish sauce or a cake.

The oils can be used cold or hot, extremely hot.
