Ok so I love pancakes and my SO loves them even more. His mom makes amazing blueberry pancakes and I know her recipe is from the Joy of Cooking...but she doesn't know that I know ;)

Anyways, last Sunday I woke up early, went to the store, and purchased all of the ingredients to make some awesome blueberry pancakes. I followed the recipe to the T and was so excited and then once I started making them they weren't crisping! Hers have a nice crispy exterior and mine were just--not. How do I get my pancakes crispy? I had them cooking at a high heat, I used butter....what am I missing?
