Meats that "braise" quickly, help!

Co-workers and I were discussing casseroles or easy fix dinner for weekdays. Anyway, we got around to wondering if there are any cuts of beef or pork that you could put with vegetables and liquid to make a nice tender pseudo braise in around 1 hour.

Thoughts? Suggestions? Recipes?
