Help needed, my cooked Ox tongue is tough!!!

Hi and Happy New Year to all ~ I cooked one of my favourite dishes, boiled Ox tongue, which I have done several times before with great success. So what horror and disappointment when my latest effort went wrong and the meat is tough!!!

Can anyone please help with suggestions how to tenderise, or how to salvage my once, "fav dish"??
