Have you taken a class at ICE?

My sister (very thoughtfully!) gave me a gift certificate to take a class at the Institute of Culinary Education for the holidays, and I'm so excited! But also, a touch overwhelmed in choosing the course.

Should I go with super practical (knife skills), fun and new (maybe Latin or Indian cooking) or "healthful" cooking? I'd love some recommendations or advice, and certainly reviews of classes from anyone who's taken them before.
