French onion soup: Beef stock or brown chicken stock?
I've always made French onion soup with beef stock, but I've had some recently in a couple of chef-owned little local BYO's made with brown chicken stock. Good, too, but not the same to me.
Which side of the fence are you on? Or do you combine the two?
