Authentic Irish cuisine

With all of the new food happenings in Ireland over the past 6 or 7 years, why is it that in a city where you can get just about any authentic cuisine from just about any country, you can not find an authentic Irish restaurant serving either traditional Irish fare or the more elegant and contemporary style that has become known as new Irish cuisine.

I am not talking about Shepards Pie, Lamb Stew or Fish n' Chips, which can be as easily termed English food.

I'm talking about Dublin Codle or Lean Bacon and Cabbage. I know you can get an Ulster Fry here or there (Yonkers or Sunnyside). But does anyone know of a true Irish restaurant and not just a "pub" with the above mentioned food and Guiness?
