advice on 3 or 4 layer cakes

what's the best way to slice into cakes horizontally to make multiple layers? should the cakes be just cooled or cold (as in fridge/freezer) planning on making cake Friday and icing cake on Saturday. when should i cut the cake and how should i store it??
i want this to be a success for my husbands birthday party!
